OK thanks for that- but my question is not
how to fix each part, but how to stop Finale from defaulting to Octavo,
Landscape, 75% etc as detailed in original question.
It never has before- as I said, the parts
produced used to be generally OK, with only minor tweaks needed.
Why has Finale suddenly decided on Octavo
,Landscape etc?

Your
document is using system reduction instead of page reduction. This was changed
c. 2002 so that it is easier to specify a specific height for a staff.
Click the Resize tool
Right-click (mac:Control-Click) a staff and choose “Resize
Systems...”
If you want to do it the old way with percentages, set “Staff
Height” to 96 EVPU’s and use the “And Resize System”
percentage to adjust it.
Big advantage to this is you don’t have to remember to set your page
attached text to fixed size font.
