Peter Taylor gave you one answer, another that works in Fin2005 and 
Fin2004 and may work in Fin2001 is to right click in an empty part of 
the toolbar, and a drop-down menu appears with all the palettes from 
which you can choose.

Check the ones you want, and they'll show up.
