I always have the reverb set to "bypass" (i.e, turned off) and I've removed the "Wet" instruments from my GPO folder entirely, so I don't load them by accident. (I hate big mushy reverb anyway -- I wanna hear the notes, not the room.)

I take it you have done the usual check that you are using dry instruments...
That may stop the CPU overload...it does help on a PC; I assume it also will on the Mac.
