If that's what you want, you can still do it that way, by running GPO Studio (that is, provided you own GPO Full). That's the way it worked with previous versions of Finale. But the AU/VST integration isn't like an external MIDI device -- it's something else entirely.

device and oughtn't be treated in a special way, in completely
different dialogs that are located somewhere else.

I agree, it's very confusing at first, but once you grok that "Play Finale through Native Instruments AU/VST" disables regular MIDI output, everything is much clearer. (There ought to be some kind of warning about this, though. At the very least, the MIDI output options should be grayed out when AU/VST output is on.)
