This is covered in the manual. Click on the Hyperscribe tool, click in a bar on the top, and start tapping away. I was playing with it last night and at first wasn't entirely impressed.

Trying to tap while the music is played back is a bit awkward, so it takes some getting used to. This is especially true with strings, when the attack isn't sharp and you'll feel it's lagging behind you. Sometimes the music skips a beat or two, and you have to do that part over again. These problems might be reduced if you, say, switch instruments to all piano. Also, it might work better without any HP rubato additions. I'm not sure if HP is doing rubato when you do the TempoTap (it doesn't do other things, like look for "pizz."), but I think I noticed a difference after turning those options down.

An improvement to this feature would be to add the option of a measure click-off of the last tempo or the starting one so you don't need to use your own metronome.

After I got used to it, I found TempoTap works fairly well, and was something I've wanted for a long time.
