Finlisters all, hear my cry:

How do I treat words with hyphens in lyrics? For instance, the
compound adjective "one-horse" in "one-horse open sleigh." Does the
grammatically-necessary hyphen get treated like a syllabification
hyphen?
Depends. If the notes with which "one" and "horse" are associated are adjacent, and if the spacing is so tight that the "syllabification hyphen" is going to disappear, I would substitute (in WINFIN) a "non-breaking hyphen" entered by holding down the alt-key, while pressing 0173 on the numeric keypad, adding this as either the last character in the first syllable (one-) or the first character in the second (-horse) [but not both] so that the hyphen does not dissappear. If spacing is not this tight, I would probably use the regular hyphen, since it is one keystroke instead of five or more. I would note, too, that from a typographical standpoint, the non-breaking hyphen is NOT the same as an N-dash (entered in WinFIN by holding the alt key while pressing 0150) on the numeric keypad. The N-dash is half again as long, and has different usage; the nonbreaking hyphen is used in compound words (one-horse), the N-dash is used, among other places as a date separator, as between birth and death dates. Neither of these is the same as an M-dash (created by holding the alt key while pressing 0151), about twice as long as a non-breaking hyphen used to replace a comma in setting off parenthetical expressions. The downside here, for MAC users, if I understand correctly, is that while N dahses and M dashes are accessible from the keyboard, the non-breaking hyphen (in slot 0173 in WIN Tru Type fonts) is not; whether it is included in the new MAC character set at all, is not a question to which I know the answer. . If it is included, then an option is to create a small text file containing the character, from which one may copy it by cutting and pasting, into a Finale text document.
