How do I treat words with hyphens in lyrics? For instance, the
compound adjective "one-horse" in "one-horse open sleigh." Does the
grammatically-necessary hyphen get treated like a syllabification
hyphen? Or should there be some alternate treatment that indicates the
difference between "one-horse" and the adjacent "o-pen"?

Or am I just getting overly analytical here? (It wouldn't be the first time.)

Use a soft hyphen for a printed hyphen (ALT 0173 in windows), a minus sign (keyboard "-" to space syllables. Doesn't seem overly analytical to me.
