Andrew,
Update Groups in TGTools will do exactly what you need. Since your
staves are optimized, nothing you do in scroll view will render in page
view unless you reoptimize. Probably something you won't want to do at
this point. Select the staff/group in page view using Mass Edit, and
run the plugin. The only caveat I've had in the past has been that
TGTools finds something in the score that makes it barf. This will
bring back a dialog box that says there is one or more groups it cannot
identify, and then it suggests you run the plugin again, rebuilding
groups from scratch, which is one of the options. This could create
other issues for your score, at least it did for me in a huge opera
score earlier this year.
But this will update many facets of groups and includes many selectable
options. Give it a try.

Others suggested changing the name in the normal way--but this affects
only unoptimized pages.
And to be precise, this is not actually a staff name, it's a group
name: celesta. I want to change the abbreviation from csta. to the
more conventional cel.
