In a short answer, no.
You would have to either find a music font that has the kind of
noteheads you like, or else edit an existing font with a program like
Fontographer.
It IS possible to change noteheads to some chosen shape (Mass
Edit>Change Noteheads...), but then your stem connections are going to
go wrong, and it might end up being more trouble than it's worth. Many
professional engravers have edited their fonts to conform more closely
to what they prefer. It sounds like you might be one of them.
