I'm not sure that you can do this. Double-clicking a doc seems to launch the latest installed version of Finale. However, if you launch an earlier version of the program first (most conveniently, from the dock), then double-clicking a Finale file will open it in the running application.
(Unlike some applications, which will launch a different version of the program even when another one is open - now that does drive me nuts).
