Hmm.

You're right -- "Change All" *doesn't* work! My apologies!

Multiple item info does work, though -- selecting all the Finale files in a folder, choosing "Get Info," and changing the default application for those items *without* clicking "Change All". 

Very strange.

As others have mentioned, you will have to launch the version of Finale you want to use *first*, and then open the files you want to work with from within that version. (This is my normal workflow, which is why I didn't realize that "Change All" was broken.)
