I was wondering why, by default, Finale favors to flat while F# is
always sharp, not Gb.  Why is it this way?

I do not use key signature.  The music I write has too many different
key of the moment.

Last night, I was working on a piece starts with B Major, while the
bridge is Eb minor (not D# minor), and got frustrated.  Not only the
need of [9] flip all the time, but more than that, MIDI chord entry
frustrated me since I had to go back to manual edit to change them all
one by one.  Everything was fine on the bridge since it's a flat key.

I know I am missing some features in Finale to make my workflow easier,
but I even don't know what to look for in the manual.  Any advice would
be appreciated.
