Background first: remember how I whenever I unlocked my systems; the measures seem to collapse onto themselves, where the notes are all running into each other? I am still not sure why that happens. I do all this layout stuff after I've entered all the music (notes, expressions, lyrics, articulations, smart-shapes, etc.).

You can define page breaks when in the Page Layout tool -- right-click the handle for the system you want to appear on the next page.

You would do this for movement breaks if you want the next movement to begin at the top of the next page, certainly.

System breaks are defined using the Measure tool -- double click the handle at the end of the measure you want to begin the new system, and in the next dialog, check the box Begin a New Staff System. You may need to update the layout after doing this (ctrl-u) to ensure that the system breaks appear in page view as they're supposed to.
