I can't seem to find how to make "subtext" the default style for

You already got an answer about how to enter chords with the
"denominator" underneath.
You know that you have three possibilities?
D/C - as you expect
D_C gives the D over the C, as a polychord,
and
D|C (that's the shift backslash, vertical line) gives an alternate
bass note at about a 45 degree angle down to the right.
I know you didn't ask, but I STRONGLY advise you not to use the
perfectly vertical arrangement as an alternate bass. This
configuration is already an established standard for poly chords,
that is to say, D triad over C triad, whereas the other two are
universally recognised as D triad over C single note bass.
Maybe the diagonal arrangement is more to your liking, but you can't
move the letters closer to the diagonal slash, which is a pain.
