Control-3 (in Mac) selects that Staff Set. You must have it programmed to show only the last staff. Hit Control 0 (zero) to view all.
You can program staff sets so that staves you are working on at the same time are next to each other, or to cut down on clutter. I can't live without them, even on my huge screen. To program a staff set, select the staves you want, then hit control-shift-[the number you want it assigned to]. Without the shift it executes the set.
I can't help you with the playback. I usually screw around with it a bit, turning switches off and back on in MIDI Setup until it works. Sometimes deselecting the output, then selecting it again jogs the computer's hairy little brain into doing what it is supposed to do.
