Oooooo, you were talking about spelling out a chord?! Vertically? That's totally different story. You can't respell enharmonically that results in different interval, i.e., b7th has to be minor 7th interval from the root no matter what, unless it is not supposed to suggest a functional chord. But, With all due respect, I found no chance I would need to spell a chord in 1-3-5-7 voicing.
