Sorry, I realize my question wasn't quite very clear (not even for
myself!). And that I was using the wrong button to create my parts (New
Part, instead of Generate Parts, which does indeed give the correct name
to the part). But this raises a new question for me: is it possible to
generate only some of the parts, and not all of them? I know I can
create them all, and then just delete those I don't need. But I was

Yes, it's possible to generate just one part.
From the Manage Parts dialog, click on Edit Part Definition, and Click
New Part. Most likely the name will be Part 1. Next, select which
staff (or staves) you want included in this part (you can have
non-contiguous staves if you wish), click Edit Part Name button if you
wish to change the name, then simply click OK without clicking "Generate
Parts."
The part you have defined will be created but no others will be.
That "generate parts" button is misleading -- you don't need to click it
to have a linked part. You only need it if you want to have Finale
actually create the parts based on the staves and names in the score.
Once you click the OK button, any part or parts you have defined and are
listed in the left-hand panel are created.
Don't mistake "generate parts" for "create the parts you defined." They
should have labeled the button "generate parts with no effort on your
part" so as not to be misleading -- it's not necessary to click it to
create the parts which have shown up in the left-hand panel.
