Jamey Aebersold has a great system for learning jazz. We have used them in the school system where I work with great success. Try starting here:

If someone hasn't already mentioned it, The Jazz Theory Book by Mark Levine is good, also Jazz Theory by Andrew Jaffe. Mark's book is very easy to read, while Andrew's book is maybe a bit more complete and rigorous. Both are recommended.
