I also disliked that "feature". Fortunately, it was easy enough to turn it off. Mail > Preferences > General > Check for New Mail > Manually. (I'm not sure what's "manual" about it -- because I use my hand to move the mouse to click the button? -- but it only checks when you ask it to.)

Outgoing mail was a little more to adjust to. I liked putting all my drafts in the outbox and then telling them to send at once. Now I have to put them in the Drafts box and send them one at a time when they're ready. The "outbox" may as well not exist. Once you put something there it's as good as already gone.

I don't recommend relying on "go offline". It's easy to get confused and end up something that wasn't ready to send.
