Thank you Chris - for your workaround for changing the key sig in mid-measure, and to David for confirming that this is probably the ONLY way to do it in Finale. (How frustrating!) In the hymnal I am using, the measure in question actually shows a thin double barline prior to the mid-measure key change, so I won't need to hide the barline, just change it to the right display.
