In the Text Tool there is a "Show" command that you can uncheck in the contextual menu. I haven't noticed whether it is there or not in 2007, as I don't use it. The text then takes on the attributes that have set for hidden items, which means it shows up as a shadow on screen, but doesn't print.

There is also under Text>Style a "Hidden" style, which is kind of cool, as you can have a text box with some printing text and some hidden text, say as a reminder to you what that text box is for or how it aligns or whatever, or maybe to space things that don't kern the way you want them to... This style is also present in the Expression Tool, though that tool has a description field as well.
