It would be helpful to know what exactly is crashing it. Does it produce a
log of the crash? Have you gone into System Profiler and looked at the logs
to see exactly what is crashing it?
You might want to try trashing your Finale Preferences and seeing if that
works. Perhaps Finale is loading up and trying to access Quicktime and
crashes?

There is no easy way to uninstall Quicktime 7.5. You might be able to find a
previous version of Quicktime and install that. But I'm not sure that would
work. Or maybe you have timemachine up and running? Backup?
