don't know about film studio practices but there are some New Music scores that show the same kind of treatment because specific performers were so crucial to the first performance / recording that the names of the performers instead of the instruments were indicated in the score. notably, i've seen this in nono's prometeo and not only are the instrument names missing in the score, but so are many, many indications that were worked out while mounting the performance; they were communicated verbally and often didn't get transcribed back into the score.
