CocoaBooklet is a great, free app that will do what you want. It doesn't work on Snow Leopard (Mac OS 10.6+) but I seem to recall that you aren't on that OS. All you do is take your letter sized pdf file and drop it onto CocoaBooklet and it will make a new pdf that is properly formatted for center-stapled booklets in tabloid size.
