Good question and one for which I can't find an answer. Isn't the "Total Pages" an absolute value regardless of any offset? In other words, the actual page numbering aside, if a file has 20 pages in it, the total pages is 20 regardless of whether the first page is number 1 or is offset to be number 300.
I guess a person might want to change it if working on a file which is a continuation of an earlier file, to be combined into a single publication, but I don't see any way to change that.
The only workaround I can see is to enter the Total Pages number by hand into whatever text box you wish to place it, working with the program's insert and adding whatever your offset is to be.
