Hi Chuck, Yes. It's worth taking a close look at the Leslie in person next time you see a Hammond player using one -- watching the rotating speaker go round and round is hypnotic and fascinating.
As for whether the Leslie speaker is a "defining part of the Hammond sound," the only possible answer is "of course." As Steve pointed out, every single Hammond-playing artist of any note employed the Leslie speaker.
