On the part, with the Staff Tool selected, click on the staff to bring up "Staff Attributes." On this menu select "Independent Elements: Key Signature." then change the key signature as you described.
If it is a linked part, the change will be reflected in the score. If this is not what you wish, extract the part first. I hope this helps!
