Score Manager. Command K on the Mac, probably control K on Windows. Get to the Instrument List, click in the Instrument column for the staff and choose the instrument you want, which will give you corresponding playback as well.
This is a great improvement once you get used to it, BTW, except for when you change instruments mid-score, it's harder to tell exactly where it happened if you don't add an expression or a memo.
