Chord symbols that have been dragged or nudged out of their default position can be easily restored to default. Go to the Chord Tool, Select All (cmd-A) if you want to do it with all of them, or simply drag around the ones you want to change. Hit the Clear button. This will only work if you HAVE a Clear key, which most laptops don’t.
Otherwise, you can go to the Utilities Menu>Change>Chords… and select Add To Default Position… zero, and hit Okay. For Staff Sets, go to the Staff Tool. Command-click each of the right-hand staff handles you want to add to the set. Then go to the View Menu>Staff Sets> and hold down the Alt key to change Select into Program. Choose one of the numbers. This only works in Scroll View, as that is the only place Staff Sets makes a difference.
