I have worked it out: use the transposition tool rather than the score manager.

Since the work is highly chromatic, I do not want key signatures, and the original does not have any. Having transposed the work down, I now have a piano part in Bb. When I go into score manager to try to set transposition other (with 0 for the parameters) and "hide key signature & show all accidentals" (I have tried these individually and in combination) I do not get any changes to the piano part. What is the correct procedure to get the transposed score without key signatures?
