That's bad, why did you do that? If you mess with your install in 
such ways, don't be surprised if you run into trouble. Though in this 
case I don't see anything that should break directly by it, but it's 
still a bad idea.

They won't appear magically. You have to start e.g. control center. 
Alternatively you could modify your ~/.xinitc to run gnome-session 
whenever you start X11. To do so, add this as the last line of your 
.xinitrc:

exec gnome-session

You are not telling us what command you entered, but it seems it 
wasn't the command to reinstall a package, which is (big surprised) 
"reinstall. So,

"fink reinstall gnome-core"

if you want to reinstall gnome-core. But control-center is in the 
"control-center" package.

If you want most of gnome, I'd recommend you to install the 
"bundle-gnome" package.
