The reason that a program might specify ghostscript 6.01 is that Apple has
not yet fully implemented the PDF standard in its Aqua display routines,
and .pdf files produced by ghostscript 7.02 sometimes do not display
correctly.

To downgrade, you should be able to say "fink install ghostscript6" and
the replacement will be made.  (Upgrading is harder because the ghostscript
v7.02 package is not set up in the same way.)

The two versions won't coexist on your system; ghostscript6 will replace
ghostscript7.  It's not possible to have both installed via fink at the
same time.

And as for your last question, the Debian tools (dpkg, dselect, apt-get)
which fink uses for installation keep track of what is _supposed_ to
be installed, and removing things manually doesn't change that  (i.e.,
fink will still think these files are there).
