Start by looking at info and patch files for other packages--there are
many examples of how to apply patches.  I'd start by doing it manually
first (i.e. apply the patches, configure, and make, but don't do the
make install).  If the package works, then you can set up .info and
.patch files in your local tree and have fink build and install the
package for you--maybe give it a new name like vim-nox-test so that you
can revert if there are any problems.
