Do you have xfree86-rootless installed, so that you can actually run X? You have to start X yourself, either from the command line (e.g. 'startx -- -quartz') or by running XDarwin.app from the Finder, before you can run gs. 'man gs' works for me--but I have ghostscript6 for TeX purposes. If you run X, you'll have a window manager (twm), but any other window manager will be fine, too.
