The gcc you saw downloading I believe is only used specifically for the fortran compiler, specifically to get around bugs in the december dev tools xcode update. Fink still generally uses (and prefers, nee expects) the default compiler for your system, and unless we have specific bugs to work around, always will.
Apple has done some things to their compiler that will not make the official gcc, so if you expect things to work it's best to stick to the latest officially supported compiler from Apple. Generally, that is what packagers use, so it is what you can expect will work.
