Edit your fink configuration file a second time. In the FAQs 
http://fink.sourceforge.net/faq/usage-fink.php#unstable stands how 
you edit them to have the unstable tree permanent in your fink 
configuration. Now remove those entries in the configuration file, 
remove all the unstable folders of your /sw/fink/10.x directory, do 
a fink selfupdate and in future fink should only use the stable 
tree again. 

If this fails, feel free to ask again but give a good explenation 
of the error that occures.
