I think you missed a step. Right here you're supposed to install Apple's X11 (including the SDK from the XCode CD).

If you already have them, well, you deleted them when you did the "sudo rm -rf". :P

*and* you don't need to install system-xfree86 anymore. It's automatically generated if fink detects a valid x11 install.
