When a package requires you to switch to gcc-3.1, you can normally be sure that the package maintainer did not introduce this to annoy you, but because the package wouldn't work otherwise.
If I see it correctly, there exist actually only 3 (three) packages in 10.2-gcc3.3/unstable that are in this category: postfix-release, visual-py23, and sawfish. Openssh is not among them. There are a couple of other packages that *use* gcc-3.1 for compiling, but they don't require you to use gcc_select.
