don't know if this helps, but... i'm running open os x's port of gimp 2.0 just fine with fink and such.
i am running os x 10.3.5 panther on a g4 1.33 mhz powerbook aluminum w/ 1 gig ram. i have fink 0.7.2, fink commander 0.5.3, apple's x11 user & developer that came with the current xcode tools. i am running open os x's openoffice 1.5 and gimp tool 2.0 (see -- http://openosx.com/) just fine launching through x11, and fink continues to work fine too. took a little help from the list here (thanx alexander), but it's all running ok.
open os x *does* overwrite some Xfree86 libraries (example: /usr/X11R6/lib/libXinerama.1.dylib) with its distro stuff to run oroborus & XDarwin, but x11 and the rest continues to work fine.
the fink & openoffice folk might want to update the web site to say so with this latest info. currently, on the fink site, there is still a reportage of some ancient flame war between lead developers on both sides over open os x's use of fink without acknowledgment on a much earlier version of gimp. isn't it time that we all jez git along? ;o))) jez a suggestion.
if, of course, you mean, can gimp 2.0 just be downloaded, ported & run via fink alone, then i guess i don't have that answer for ya.
