I just downloaded the new version (1.0) of x11 from Apple's website. I
noticed from the FAQ on Fink's website it says to add 'source
/sw/bin/init.sh' to your xinitrc file in your home directory. However I
don't have a .xinitrc file in my home directory even when hidden files are
visible.
You should create it with (for example): echo "/sw/bin/init.sh" > .xinitrc

You should create the file, indeed. But it needs to have at least two lines so that it doesn't quit at the end, and the init.sh line is
. /sw/bin/init.sh
or
source /sw/bin/init.sh
All this is dexcribed in detail in the Fink documentation about running X11, see http://fink.sourceforge.net/doc/x11/run-xfree86.php?#xinitrc
