It appears that OS X 10.3 has control-center2-dev only at this time,
yet gnucash explicitly requests control-center-dev. I assume you have
that latter package laying around from "a while ago", which is why you
were even able to get as far as you did in the compile process. One
solution is to make the older control-center available, another is to
have gnucash use the newer one. The latter is prefered obviously:)
