That sounds to me like a user-level customization issue, which is set by stuff in $HOME/evolution. See if it works if you rename that directory to something else (so that you don't lose information) e.g.


mv ~/evolution ~/evolution.old

(maybe a corrupt file or something like that is causing this not to get saved) If that works, you can then try copying files from your former ~/evolution directory to your new one.
