Had to think about this for a minute--my prior answer was incomplete because "fink list" only knows about those packages for which the information files exist on your system. If you're using rsync selfupdating and haven't turned on the unstable tree, you won't be able to see such packages.
This functionality cannot be added easily to apt-get because it only knows how to keep track of the packages that are in the binary distribution.
Your best bet to check the availability of a package is at
http://fink.sourceforge.net/pdb
This will give you a table showing what versions of a package are available and where.
