That's because there's no such thing. :-)
Here's what fink itself says (for GNOME 2.4 or later):
$ fink desc bundle-gnome
...snip... Suggestions on running: . Fullscreen X: Just start up normally with "gnome-session", make sure you aren't running any window managers. . Rootless X: Here I'd suggest just running "gnome-panel".
