I'd assume that it means that you don't have the unstable tree turned
on, instead.

Stardict isn't a fink package, right?  Then there's no problem.  I'd
recommend just doing

sudo rm -rf /sw

to clean out your old Fink tree, and then using the 0.8.1 installer.
No non-Fink packages will be touched.
