Until yelp gets fixed, if you're connected to the internet often, use:

http://www.gnucash.org/docs.phtml

All the docs are there.

GnuCash uses yelp to handle its documentation. Yelp requires a browser  
engine. We're stuck until the browser engines can be built in Leopard.  
(We might even be stuck after that, as newer versions of yelp itself  
aren't working well for me on a mac.)
