That's the completely normal standard operation of nautilus: it's a
full filemanager system (a la Finder) so of course it creates a full
desktop of its own. According to its own help system (nautilus
--help), there's a --no-desktop flag that might be of use to you?

What (if any) version of fink's "gnome-icon-theme" package do you have
installed?
