I wouldn't call this "easy" in all cases. I had once tried to switch von
stable to unstable about one year ago and ended up with a rat's tail of
error messages (mainly dependency inconsistencies and so on), finally
giving up and installing the desired program (Gnuplot 4.2) independently
from source.

However, switching back to stable now also caused millions or errors. I
finally had to revert to a (fortunately rather new) backup, and therefore
will never again try to switch from one tree to the other unless I am
forced to. If I need some current version of software, I now prefer to
install it independently.

I do not know whether such problems are less frequent on Leopard, I am
using Tiger.

Also please mention to newbies that switching to the unstable tree means
to install almost everything from source, including the gcc. And for
those, who have never done this: Building the GCC usually means nonstop
computing for many ours, maybe somewhere between ten hours (my experience
mentioned above) up to even 72 hours (three days and nights), depending
on the machine performance and probably the compiler version. Actually, I
am now running the GCC 4.2.2 installation now (by now without problems)...
