Try changing the quartz-wm call to use

quartz-wm --only-proxy &

That way GNOME will call its own window manager but you'll still get  
the copy and paste integration.  GNOME does some stuff that quartz-wm  
on 10.3 and 10.4 didn't know how to cope with, so maybe this will help.
