I tried this on the guest account on my machine, and saw the same  
behavior.  It went away when I ran

. /sw/bin/init.sh

in the terminal before invoking gnucash.  Is your non-admin account  
set up with Fink's environment?  If not, the run /sw/bin/pathsetup.sh  
to set that account up.
